When I reply to a message Outlook automatically saves it as a contact. How do
I prevent Outlook from doing this? Is there a setting somewhere I can change?

Outlook on it's own does NOT do this automatically. Either you have an
add-in, or you are confusing the Autocomplete Cache with your Contacts...
