Contacts and sending messages in Plain Text

Our organization uses Outlook 2007 and there are select contacts that we
correspond with who can only receive emails in Plain Text.

Is there a way to customize new messages to ONLY certain contacts to send in
Plain Text by default?

Yes, you can. Open the contact from your Contacts folder and then right
click on their email address list. In the pop-up screen choose Outlook
Properties... Use the "Internet format" dropdown list to select "Send Plain
Text only".
