changing names, etc of system files and settings

Hi,

I like to change the name and position of system files to my liking. I have
most of it done now - I'll spare you details - but there's still a couple of
issues I'd like to fix:-

When in Word and click save as, I want to rename 'my documents' as 'all files'
(not sure if this applies to other programs)

In taskbar start menu I want to rename 'my recent documents' as 'my recent
files', rename 'my music' to 'music' (also it doesn't link to the music
folder) and add the folder 'videos'.

I don't have any tweaking sofeware so can this be done or if not what
tweaking software do you recommend?

System file names cannot be changed at all...
They are hard-coded to the O/S.
