Changing email Dates within Outlook

I have an employee that appears to be creating havoc in the office. He is
writing emails to other employees threatening, but then turning around and
emailing me something totally different that appears to be written a day
earlier. Can a date be changed within Outlook to alter email dates? I want to
have hard proof before firing him because of the litigious tone taken in his
emails to the vice president and coworkers.
 
Is this internal mail using an Exchange server? If yes, I would ask that
the HR people authorize you to have the mailbox monitored and the records
from the Exchange side reviewed.
