changing default settings in message replies

I can not get my stationary to work in reply messages (emails). I would like
to know how to do this?

Also, I know there is a setting some where where I can change the setting
for reply emails. I believe the check box says something to effect reply in
same format that was sent. I cannot find this check box.

Also, When I reply to messages, ALL messages when I reply my typing is in
blue. It is not underlined. It is not a hyper link. Just blue font. How can I
change this stuff.

Most of those settings are on the Tools | Options | Mail Format dialog.
