Changing default email displayed in Outlook when sending email.

In Outlook (Office 2000 Pro), how do I change the email address I originally
set as the default for how all my messages read "from"?
 
Tools-Options-Accounts or Tools-Options-Services depending on how Outlook is
setup.

Thanks for responding. I've tried the Tool-Options-Services route to no
avail. Any other suggestions? Any help is greatly appreciated.
