Change Task Priority options?

I've never liked the Priority list in Outlook. It gives just 3 choices.
Is there any ways to change that list, maybe 1-10? Maybe a Custom field of
some sort?

Yes, this would require a custom field. You cannot alter the built-in priority choices.
