How to update "Custom Priority" or "Custom Status" Task fields?

I'm trying to enhance how I organize my Outlook tasks, and I see two custom
fields are available; "Custom Priority" and "Custom Status" but I cannot
update either field nor is there any content in Help about either of these
fields. Has anyone used these fields? If so, please share.

Those are not standard fields for Outlook tasks. That's why you'll find
nothing in Help about them. Some other source -- an add-in or the user --
added them.
