If the server you're using supports IMAP (many don't), click on Tools, then
Accounts, then your email account, then Properties, then Servers, then
change what appears in the box on the My incoming mail server is a ______
server line, then click Apply, then OK, then Close.
You can't change the server type for an existing account.
Just create a new account with the correct server type.
Make sure your provider actually supports IMAP. Most do not.
