I am sure my problem stems from my former employer changing settings on their
exchange server that i used to access thru a vpn. i simply need to open
outlook and delete that account. however i cannot open it. i get an error
that the exchange server is not available (obviously) and then it says
"cannot open default e-mail folders. the info store could not be opened." i
try and choose to work offline and it just closes. all i need to do is open
outlook and delete that account

Just delete it through control panel - mail.

If you can't figure out how, I'll need to know something like what OS you're
running in order to actually give useful steps.
