Outlook keeps trying to use exchange server and I am using it at home. I have
tried selecting work offline and then another box pops up stating it cannot
access my default email files. It forces me to close it then.

If this is not effective, try creating a new profile.

- Click Start, and click Control Panel. Click Mail icon.
(If you use VISTA select the Classic View to see the
MAIL applet)
- Click Show Profiles
- In the "When starting Microsoft Office Outlook, use this
profile:" area, please select "Prompt for a profile to be used"
- Click Add and type the new profile name as you like in the
Profile name box. NOTE: Do NOT use the same name as
your original profile.
- Click Next and click Finish.
- Try to open Outlook. Choose the new profile in the
profile list and click OK.

Open the Mail applet in the control panel, remove the exchange
account/connection, and correctly configure your type of connection &
account

I am using Vista, when I switch to classic I cannot see a "mail applet".
could it be under a folder?

Yes, If you use VISTA you need to select the
CLASSIC VIEW to see the mail applet.

Thank you both. I finally was able to figure out that since I was using a
64-bit, the mail applet was in another location.
