Cancelling A Scheduled Shutdown

If a scheduled shutdown commences, and I wish to override it and continue
working, I don't see a way to do so.

Am I not seeing the option, or is it really a hard shutdown without an
option to cancel it?

I am using "shutdown -s", and it gives me 30 seconds to fumble in vain
trying to stop it.

Use shutdown -a to abort a scheduled system shutdown.
