Can one 'un-partition' a hard drive?

My other half got lazy and, rather than get a larger hardrive, partitioned
his old 40G. I just got him new 'guts' - mobo, PCU and a 250G drive. Is
there any way of saving/transferring all the info that's currently on the
40?

Why not leave the 40GB drive as a second drive in the machine? You can set
the new drive as master and the 40GB drive as slave. I assume that 'PCU' is
actually a typo and you meant to type 'CPU' (and not 'PSU'). Given the new
motherboard and CPU, you'll have to reinstall windows and applications
anyway. After the new drive is up and running, you can copy your data (not
apps) from the 40GB.

You can also partition the 40GB into a couple of partitions for Data and
Apps and use one of your partitions on the new drive for back ups (I
recommend Acronis True Image). That way, if either drive goes south, you'll
be protected.

We have a home network and his system acts as server; we share anti-virus
since he 'convinced' his system that my PC is another drive on his.

He probably just mapped your shares to his system.
