Can I simulate sending an email without connecting to the interne.

I want to show my students how to send an email without actually sending it.
The machine they will be using does not have an internet connection. I want
to be able to simulate the process.

sure - the outgoing emails just get stuck in the Outbox. I turn off "send
and recieve" sometimes when training as I am on the network ad don't want
lesson pactice stuff going out to real recipients.

I think you will need to set up an email account for each PC even though you
won't really send. Just make up a POP3 hotmail account in the account
settings.
