Most scanners come with software that allows you to read the data into
wordprocessors or spreadsheets.
I wouldn't be too optimistic about the reliability, though, if the tables
are not explicitly meant for character recognition.
When I've done this, I just scanned into a *.txt file using the scanner's OCR
software, and then read that into Excel in the normal manner.
Simple tables work well. Things that are all jammed into a small space with
vertical lines and such (like some financial tables from the newspaper)
generally confuse the heck out of the OCR software and take a lot of manual
editing to recreate the columns before saving the txt file.
