Can I create a mind map using a microsoft product?

I use mind maps to assist with memorising material for exams and would like
to input the data electronically so that I can manipulate the data.

I think Visio supports mind mapping, but you might be better off using a
programme specifically designed for it.

And I'm guessing that you can read your own handwriting?

No, but the physical act of writing creates new pathways in the brain which
helps you remember what you wrote. And sometimes a mis-reading can be very
serendipitous....
