Bullets and autoformatting

I'm having a problem with the automatic features in Word. I bulleted a paragraph and ever since, word is going kind of psycho. Every time I apply a change of any sort to a highlighted piece of text, word is applying that change to the entire 85 page document. For example, now when I italicize a highlighted sentence. Word is Italicizing the entire doc. If i hit undo, it un-italicizes the entire document, *except for* the part I wanted italicized in the first place. This has put me into sort of a situation where I have to hit undo as an extra step every time I do something.

Is there a way to turn all the fancy automatic stuff off, since word seems to be having a problem with it?
