bracketed name appears when I start to type in an email

After clicking forward and starting to type a message, my bracketed name will
appear. I back space to delete it, but as soon as I start typing it appears
again. How do I get rid of it?

Select Tools > Options > Preferences tab > Email options button. You are
most likely after the setting at the bottom of the dialog box.
