The book fold in page set up automatically changes to landscape. Is there a way to keep it at the portrait setting

File > Page Setup > Paper Size (under orientation) select "Portrait" > and
click the "Default" button at the lower left hand corner of the the dialog
and click OK.

It changes to landscape because that's the way it works: you create two
portrait pages on one landscape sheet.
