Where can I find AutoText in Word 2007?

They are called building blocks now. Click the insert tab on the ribbon, in
the text group, click quick parts, you will find Building blocks organizer
there. All built-in building blocks are in differtent categories.
If you want to save a text selection as a building block, select the text,
click on quick parts button and choose save selection as building block. You
will be presented with a dialogue in which you can type a name for your
autotext, choose a gallery to save it in, and where to save it.
Remember you can use your building block anywhere by typing it's name in the
document and pressing F3.
