How do I stop Word from adding a space when I type the : sign?

That's a colon.

Are you typing in English? Certain languages demand a space before or after
the colon (I think French), so Word might add them if that language is set
(check Tools | Language), but it doesn't on my machine, in English.

The language is French Canada. So I guess if y really don't want a space
before the colon sign I have to swith the language to English, then write
what I want, and switch back to French to continue writing. It would be a
good Idea if I could personnalize Word to avoid doing this.

This is so obvious I don't know how anyone could have missed it ;-)

This is controlled by the AutoFormat "Replace straight quotes with smart
quotes" option when the language is set to French. You have two options -
after typing a colon you press Ctrl+Z to undo the autoformat add of the
space, or you can switch off the autoformat option altogether - but then you
won't get smart quotes (the French double chevron symbol) either.
