Automated response e-mail

Good morning,

I was wondering if it is possible to set up outlook so that it would
generate an automated response to an e-mail that arrived with a specific
subject line. For example a "Thank you for clicking on out link/your
interest in our product" e-mail.

Have you tried using the Rules Wizard (on the Tools menu)?
