Assign incoming mails a color category

Is it possible to assign a color caterory to incoming mails from a single
person or from a distribution list?

Yes, it is. I do it for mail items coming from my family and other
individuals. It's possible in the Rules Wizard. Have you taken a look at the
actions possible for incoming mail items?
