I know there is a method to assign a color to the text of the subject line.
You can set a rule that a color (ex. red) can be assigned to any email coming
from the boss. It makes the important messages stand out in the inbox.
Did it in the past, cannot seem to be able to do it any more.
Any suggestions?

it's automatic formatting and is part of views, not rules. Either use the
organize feature (tools, organize) or do it through customize views.
