Outlook2007: How change color of emails in Inbox ?

How do I change the color of emails in the Inbox, without using "category"?
For example, I want to make emails that are important red, but the important
emails do not all "fit" a category, ie they are not all from my boss for
example.

So which criteria do you use to rate it important then?

If manually, you can set the High Priority message property or assign it a
custom category called Important.
Then you can use Automatic Formatting to highlight those emails the way you
want.
