I can find my archived emal files but when I try to open them using outlook
or even Word, all I get is a series of squares where it appears the letters
should be.

You need to open .pst files using Outlook's FIle | Open | Outlook Data File command.

When I go to Files - Open - Open Outlook Data Files.....four files appear
named Archive, Outlook, Outlook1 and Outlook2. When I try to open any of them
nothin happens except Outlook2 where I get todays Outlook Today. I still
cannot open archived emails.

You will need to switch to the Folder List navigation pane to see the folders in the .pst files that you've opened.

I found some of the emails I was looking for but only by subject. When I try
to open them I get an error: Cant open this item. Could not open this item.
Try again.

That could indicate that the .pst file that holds the data is corrupt. Try running Scanpst.exe 3-4 times, alternating it with Scandisk.exe or another disk repair tool. See http://www.slipstick.com/problems/scanpst.htm
