Is there a general way to prevent apps such as QuickTime from making
themselves startup programs every time they're used?

Start/Run/type MSCONFIG and click Startup tab
Uncheck/disable Quicktime (qttask
Click Apply and O
Reboot

I have usually found that option to be available under Options or
Preferences within the applications themselves. This applies to RealPlayer
and numerous other apps.

to RUN, and type MSCONFIG. Hit enter. When the large gray dialog box
opens, click on STARTUP, (upper right hand corner). You will see a
large dialogue box listing programs that load when Windows loads. You
may UNCHECK those that you do not wish to load when Windows loads.
Those you uncheck may be loaded later, after Windows comes up...IF you
want to run those programs at all. The more items you UNCHECK, the
less time it takes for Windows to come up, (boot).

Hope I understood your question...
