Accidently I moved the Excel icon from the All Programs menu list - left
click & drag rather than right click & drag to the Desktop.
How do I return it to the All Programs list?

Do the reverse from where ever you put it?

Not sure I am able to do this because when I open the All Programs Menu from
Start, I can't seem to be able to grab the icon and drag it back before the
Program list disappears

This is simply a view of the shortcuts that are the folder C:\Documents and
Settings\All Users\Start Menu\Programs

You can add, remove, or change shortcuts there at will.

Click and drag the shortcut to the Start button, and hover till it
opens. Hover over All Program till it opens, etc.. Immediately after a
faux pas, you can press Ctrl/Z to Undo it.

Right CLick on Excel icon on Desktop, Select Copy
Right click on Start Menu, select Open All Users
In right panel of Explorer window, right click on Programs (or open it) and
then select Paste Shortcut in right panel of Programs.

All done.
