If do an adprep /forestprep and /domainprep will my dc quit doing any dc
functions?

I'm almost 100% sure that it has no effect on dc operations, other than
there intended functions. I know you can extend the schema w/o ever
upgrading so I don't see a problem with this.

No, running adprep will not affect Your DC functions. But if it is
adprep from windows 2003 run before upgrading to windows 2000 and You
have exchange 2000 in Your network You can run in some issues, but it
can be easy fixed
