Everytime I try to access my address book a dialogue box pops up saying
"Can't contact LDAP Directory server (81)" This also occurs when I try to
insert an address into an open email form. Any ideas as how to fix it?

Remove the LDAP server service from your profile.

I don't wish to appear too thick but how do I do that?

For OL2002 and OL2003, click Tools>E-mail Accounts. Click "View or change
existing directories or address books", then Next. Highlight the LDAP
directory and click Remove. Click Finish.
