I have a project where I scanned a picture of a packing list, saved it as a
jpg, and inserted it onto my slide. Unfortunately, because of it's size, you
cannot read anything on the packing list. A co-worker said there is a way to
magnify the text when you click on it. Is it possible to do this with an
imported picture???

How about using Triggers?
You can add an enlarged version of the text beside the image and have the
text triggered when you click on the picture.

For more information on how to use triggers, check this out:

It's possible but I'm not sure you like the results.

Dbl-click your picture. In the dialog box that appears select the Picture
tab is not already select. You should see a "crop" selection on this tab.
Crop the image and resize until reach the point the text is readable.

You may run into a problem with this method which depends on the size of
your image. The text may become pixilated before you reach a level of
readability.

Good luck.
