Which version of Access are you using?

In Access 2003, you can click on Tools > Options... and select the General
tab. Deselect the option that reads "Recently used file list". Click on
Apply, close this dialog, close Access and then re-start Access. You should
see that the MRU (most recently used) list has been cleared.

There is also a registry hack that you can use, if you are comfortable
working with .reg files.
