I'm new to all the windows Admin.
My question is this, I've looked in the License MMC to try and find out how
many licences are in use so I can determine how many we have left.
Unfortunately it has made me even more confused, at the place I have started
they use Per Seat Cals and on some of the licences it says that 350 are in
use when there are only 35 people in the company.
Can anyone help me?

The license logging service does not work as expected. You would be better
off looking for some sort of invoice that tells when and how many CALs were
bought.
