You can not upgrade Windows XP to Windows Server 2003.
Workstation to Server is not a supported path.
You will need to reinstall your programs after Server 3003 is clean
installed.
Further questions about Server 2003 should be asked in a Server newsgroup:

Why?????

What do you think a server OS will give you? Other than the additional
cost.

If you are not planning to be running a Windows Server, there is no benefits
of installing Windows Server 2003 (it is not Windows 2003!)

You can not "upgrade" a single user Windows XP to a multi-user Windows Server!
Only way is to "erase" everything and start over.

It has never been possible to perform an in-place upgrade from a
Microsoft workstation OS to a Microsoft server OS. This remains true
when transitioning from WinXP to Windows Server 2K3. You have three
choices:

1) Format the hard drive, install Windows Server 2K3, and reinstall the
desired applications.

2) Install Windows Server 2K3 onto an empty partition on the existing
system, creating a dual-boot scenario. Reinstall any desired
applications onto the Server 2K3 partition.

3) Leave the OS as it is, Win XP.
