red cross in email sent

I use HTML email signatures and formats and when I create an HTML signature
with an image in it, I have prolems when sending as Outlook seems to strip
the image file and a red cross is what the recipient receives.

It would only work if the file (the image file) were sent with it. An
interesting idea would be to find one of the free web hosts or image hosts,
upload it, and then use the address for the image in your email. (I know a
number of my emails contain it that way though I generally read them in
plain text so don't even really notice.)
