Signatures in Outlook 2010

I just upgraded from Outlook 2003 to 2010.

For email, I am using HTML.

In using Signatures under 2003, there was a list of commonly used
signatures and I was able to use multiple signatures in one email. In
2010, I cannot locate most commonly used signatures (its always the
long list) and it seems once I add one signature, if I add any more
signatures the previous signature is replaced in the email.

I cannot locate any options on how to control Signatures.

Is there some options in 2010 for how I used 2003 or the capability of
changing how signatures work in 2010?
