New Contacts added through email response don't use custom form

I have created a custom form, published it, and assigned it as the "default
form" for Contacts.

I have changed my existing contacts to this form using the "Change Form"
add-in.

All is fine for new contacts I create, but when a new contact is added
automatically when I respond to an email, it posts to the default contact
form. Also, when I try to use "Change Form" on these contacts, they don't
convert.

How do I change this so that new contacts created by my email response use
the custom form?
