How to change the default layout view for new emails

Hello,

Outlook 2002 user :( But I love the product.

How can I switch the default layout view setting when I compose a new email?

I understand I can change the layout view manually, but I am looking to
permanently change the view settings so that I don't have to manually change
the view with each email I compose.
