Change Outook default book layout (for attachment) to normal page.

It appears that the Outlook default layout for attached files is a "book
layout". I do not like this view, and I'm wondering if someone knows how I
can change the default layout to normal or print layout?

It's an option in Word, not Outlook. Tools | Options | General | Allow starting in Reading layout.
