How do I correct share/folder permissions en masse on my server?

I have 40 gig of mp3's I want to share across my network. I notice
some of the folders I get "Access Denied". I can map a drive to the
shared folder and see the folder and all the sub folders. But some of
the folders when I touch them give me the access denied message. When
I view the properties, I see a cryptic SID number. I remove that SID
from the user list and then add "Everyone" to the list with read
permissions since that's what the accessible folders include that
user. This works. Not sure how some folders got this old SID and
others didn't.

I have too many folders to do this manually (test which folders I
can't access, go to the server, remove the old SID and add Everyone).

Is there a way to just reset ALL permissions from the parent folder on
through all sub folders? You used to be able to do this on NT but I
don't see that in 2K/XP.

Also, I mapped this drive with a user (no password) that exists on the
server. But unless I include the Everyone group in the permissions, I
wouldn't be able to access the folders. If I wanted to restrict access
just to a particular user, how would I do it?
