entire email address is displayed in address bar

The entire email address is displayed in the address bar of a new outgoing
mail. I would prefer that only the name of the person that the email is
addressed to be displayed. Can this be done?

No. You see both, and you can't change it.
What the recipient sees, depends on their email program.

If you upgrade to Windows Live Mail, it shows only the recipient's name
while composing/sending:
http://get.live.com/wlmail/overview

Of course, what the recipient actually sees is up to *his* email program.

to post a new question asking how I can move my Windows Mail contacts to my
contact list in Outlook.

Mail. How can I move my large address book from the Dell to the HP?

In Outlook, export the contacts to a csv file.
Copy the CSV file to the Vista computer.
In Windows Mail, import the csv file

But if you have Outlook 2003 or newer, why not use that?
