E-mail results but hide certain fields from Guest Book

In our guest book, we request the user's e-mail address. I want to hide that information from the results page but still have it e-mailed to me when someone posts. I know how to do the e-mail results, that is not the problem. For privacy purposes, I just don't want their e-mail address to post with their comments in the guest book. Short of making the e-mail address text the same color of the background, is there a way to do this?
