After Converting to 2007

I've converted my application to 2007 and so far everything is working
except. I've ran into a couple of problems my old menu bar is now that
ribbon thing the 2007 uses. I need to make a change to it but can't find
where I can make any changes. Also the ribbon at the top of the page is
quite large and takes up a big portion of the top screen. Is there any way
to make this ribbon big? Thanks for any help.

The top bar, to the right of the Office button has icons for Save, Undo,
Redo, and arrowhead for pull down that has 'Minize the Ribbon' to enlarge or
shrink the ribbon.
