when i'm logged into my domain, is there anyway i can keep everyone from
seeing a particular folder on my pc (even local administrators and domain
admins)?

No. Don't put anything on your work machine that you wouldn't want
anyone else to see. You could encrypt the data, but the folder/file
would be visible to the administrator and they would undoubtedly ask
questions if they found encrypted data on your workstation.
