Word-Office 2003 how do you turn off the intuitive formatting?

I have noticed the MOST irritating automatic function Microsoft has yet built
into Word.

If I center one line, go down two lines and left align - the entire document
changes. If I have a few lines with returns in between and I want to bullet
something - it bullets the whole page.

If I change the font it changes for the whole page.

How do you turn off the automatic "change everything" or I would also call
it intuitive (lack thereof) formatting. It is REALLY irritating!
