Where can i get some "serious" help and detailed information about all the
fields in word 2007, and how to use them, besides the "using fields to create
an TOC" tutorial?

Sad to say, the best documentation is the set of help topics about the fields
that was in Word 2003, which are available online starting at
http://office.microsoft.com/en-us/word/CH060832471033.aspx. Even sadder, the
quickest way to find any particular field's topic is to ask Google.

Fortunately, the fields in Word 2007 are almost completely identical in syntax
and function to those in 2003.
