The option to show gridlines is greyed out in Word 2003 so that I can't see
the limits of tables without borders

In Word 2003 that wouldn't matter.

Is your cursor inside a table?

I can't say for sure why it *is* dimmed but just extending on the point: In
2003 it also doesn't matter whether something else is selected even whether
the active document *contains* a table - the command should still be active.

The only times I've ever seen Show/Hide Gridlines dimmed is when in Reading
Layout View or if the document is Protected in some way. Could either be the
case here?
