Windows Mail (Vista)

Is there any way to prevent the email address of both the "To" and "From"
names in the email from displaying? OE did not do this.
 
Are you talking about what *you* see while composing the email, or what
the recipient sees? What the recipient sees should not be any different
than what was displayed with OE.
There is a good reason why Windows Mail shows addresses while composing.
Some recipients have multiple email addresses, and by displaying it, you
can verify that you have picked the correct one. The same holds true for 'From'
addresses.

If you send an email from Outlook Express and the recipient reads it in
WinMail they will see the addresses even though OE did not show them.

Only if you have the preview pane header enabled in Windows Mail.
I don't recall if OE had a similar option.

Or if you double click the message to open it in its own window.
