Windows 7 professional shuts down our network server when it tries to connect
to it, everytime, any suggestions.

One suggestion is to ask in a proper group... this group is for XP Embedded.

Alright at the risk of taking the office offline temporarily I decided to
test things out. My laptop is running Windows 7 Pro.
We have two Cisco Catalyst switches and two HP ProCurve switches.
When plugged into a port on the ProCurves it takes the switch offline.
When plugged into a Cisco switch it runs just fine. I'll stick with Cisco.
