Why does font color change for those responding to my e-mails?

When I e-mail people in my office, their response text to me automatically
switches to a different color (in my case a light yellow which is almost
impossible to read). This is not happening to anyone else in my office. Does
anyone know of some sort of tracking change that would automatically change
this text? Any fix to this?

I'm not sure if this applies only to your own emails or to others that are
sending to you, but look in Options - Mail Format - Stationary and Fonts.
You can choose how the text looks to Replys and Forwards.
